Sausages with Tomato and Beans
Serves: 4
Ingredients
1 tablespoon olive oil
1kg beef sausages
1 brown onion, diced
2 garlic cloves, crushed
1 long red chilli, finely chopped
2 tablespoons oregano leaves, chopped
2 x 400g cans Val Verde diced tomatoes
400g can cannellini beans, drained, rinsed
toasted crusty sourdough bread, to serve
Method
- Heat oil in a large saucepan over medium heat. Cook sausages, turning occasionally, for 8 to 10 minutes or until cooked through. Transfer to a plate lined with paper towel. Cover to keep warm.
- Add onion to pan. Cook, stirring often, for 3 to 4 minutes or until tender. Add garlic, chilli and oregano. Cook, stirring, for 1 minute. Return sausages to pan. Add tomatoes. Cook, uncovered, for 5 minutes or until sauce thickens. Add beans and cook for 5 to 6 minutes or until beans are heated through.
- Place sausages on plates. Spoon over tomato and bean mixture. Serve with toasted bread.
Tips
You could replace the cannellini beans with chickpeas or kidney beans.
