Roast Beef Wraps

 

Serves: 4

Ingredients

Blue Triangle ¼ cup whole egg mayonnaise
Blue Triangle 1 crushed garlic clove
Blue Triangle 4 wholemeal wheat wraps
Blue Triangle 1 bunch trimmed rocket
Blue Triangle 12 slices rare roast beef
Blue Triangle 8 sliced cornichons (pickled cucumbers)
Blue Triangle 3 sliced roma tomatoes
Blue Triangle 8 slices Swiss cheese

 

Method

  1. Combine mayonnaise and garlic in a small bowl. Spread mayonnaise mixture over the base of wraps.
  2. Evenly divide rocket, roast beef, cornichons, tomatoes and Swiss cheese among each wrap.
  3. Roll up firmly and fold in the ends to enclose the filling.

 

Tips

 Always rest beef after cooking. This gives the meat juices a chance to redistribute, giving a more moist and tender result

 These wraps can be made a few hours ahead and refrigerated until needed.
