Tallow Washed Whiskey

 

Serves: 1

Ingredients: Tallow-Washed Whiskey

Blue Triangle 500ml whiskey of your choice
Blue Triangle 50g Cape Grim grass-fed beef tallow, melted
Blue Triangle 1 teaspoon sea salt
Blue Triangle ½ teaspoon cracked black peppe
Blue Triangle Optional: fresh herbs (rosemary, thyme or parsley)

 

Ingredients: Cocktail

Blue Triangle 60ml tallow-washed whiskey
Blue Triangle 5ml simple syrup (or to taste)
Blue Triangle 2 dashes Angostura bitters
Blue Triangle Orange peel, to garnish
Blue Triangle Ice

 

How to Make the Tallow-Washed Whiskey

  1. Melt the tallow until liquid andwarm (not hot).
  2. Combine the melted tallow with the whiskey in a sealed container.
  3. Shake gently to integrate.
  4. Rest at room temperature for 1 hour, then place in the fridge until the fat fully solidifies on top (4–6 hours).
  5. Remove the solid fat cap with a spoon.
  6. Fine strain the whiskey through a coffee filter or muslin cloth to remove any remaining fat particles.
  7. Store in a clean bottle.
  8. This creates a silky, savoury whiskey with a rich mouthfeel — perfect for an Old Fashioned.

 

Cocktail Method

  1. Add tallow-washed whiskey, simple syrup, and bitters into a mixing glass.
  2. Fill with ice and stir until chilled and balanced (15–20 seconds).
  3. Strain into a rocks glass over a large ice cube.
  4. Express an orange peel over the glass and drop it in to garnish.
