Tallow Scotch Fillet Steak

Ingredients
1 Cape Grim Reserve Scotch Fillet Steak
1 tablespoon Cape Grim Beef Tallow (solid or melted)
Sea salt
Cracked black pepper
To Serve
Green salad
Our Tallow Roasted Potatoes (see recipe above)
Method
- Remove the steak from the fridge 20-30 minutes before cooking to allow it to come to room temperature.
- Season generously with sea salt and cracked black pepper.
- Heat a cast iron pan over high heat until very hot. Add the tallow and allow it to melt and begin to shimmer.
- Place the steak into the pan and cook for approximately 3 minutes on each side for medium rare, depending on thickness.
- Remove from the pan and rest on a plate for 5-7 minutes to allow the juices to redistribute.
- If using leftover roasted potatoes, add them to the same pan to reheat and crisp up in the remaining tallow.
- Slice the steak and serve with a fresh green salad and tallow roasted potatoes.
Notes & Variations
For best results, use a heavy-based pan such as cast iron to achieve a proper sear.
Avoid moving the steak too much while cooking to develop a deep crust.
Resting the steak is essential for a juicy result.
Serving Suggestions:
Serve simply with salad and potatoes or elevate with a classic peppercorn sauce or herb butter. Also pairs well sliced over a fresh salad or grain bowl.
