Sausages with Caramelised Onions

 

Sausages with Caramelised Onions

Serves: 4

Ingredients

Blue Triangle 2 tablespoons olive oil
Blue Triangle 1 red onion, halved, thinly sliced
Blue Triangle 3 sprigs thyme
Blue Triangle 1 teaspoon salt
Blue Triangle 2 tablespoons brown sugar
Blue Triangle 1 tablespoon balsamic vinegar
Blue Triangle 8 beef sausages
Blue Triangle mashed potatoes, steamed sugar snap peas or snow peas, to serve

 

Method

  1. Heat 1 ½ tablespoons oil in a large, non-stick frying pan over medium heat. Add onion, thyme and salt. Stir to combine. Reduce heat to medium-low. Cook, uncovered, stirring occasionally, for 30 minutes or until onions are soft. Add sugar and vinegar. Increase heat to medium. Cook, stirring, for 5 minutes or until onions start to caramelise.
  2. Meanwhile, heat remaining oil in a non-stick frying pan over medium heat. Add sausages and cook, turning occasionally, for 15 to 20 minutes or until cooked through. Serve sausages with caramelised onions, mashed potato and peas.

 

Tips

 Always rest beef after cooking. This gives the meat juices a chance to redistribute, giving a moister and tender result.
